These are tannery run #2 grade black dyed sheep leather. The pieces are approximately 3.75 to 7.25 square feet.
Sheep leather has two layers to it and is much easier to sew than deerskin or most other leathers as the needle goes through the hide much easier.
Tannery run grade leather is a mix of grades. The tannery run #2 grade hides have some damage on the leather and suede sides (e.g. rubs, scratches, etc.). They may have a few holes and patches and/or spots of uneven coloring. The leather side is plushed - that is, shiny and smooth to the touch.
Sheep are not endangered and are not subject to CITES controls.
